One staple in our family’s diet is the simple roast chicken. We get a 4-6 pound roast chicken at the grocery store each week and it serves as a simple no fuss dinner option one night that week. Coat the chicken with some olive oil, salt and pepper and add some diced vegetables and spices to the chest cavity and an hour and a half later dinner is ready. If you are like us however, the whole chicken is a little overkill. Jen and I will eat the chicken breast for dinner and maybe some of the dark meat of the leg, but there is so much meat left on the bone unused. Not wanting it to go to waste, I’ve perfected the following soup recipe to turn the remains of a weekly dinner into many lunches to follow.
